Ukrainian chefs and government officials jointly proclaimed the Manifesto on the revival of Ukrainian cuisine, its promotion in the world, the search for new formulas of ancient dishes, and domestic gastro tourism. This was reported by the press service of the State Agency for Tourism Development.

Ukrainian cuisine is one of the elements of consolidation, as it is closely connected with our history and culture. And it certainly contributes to the awareness of national identity.

The head of the State Agency for Tourism Development Maryana Oleskiv stressed that in recent years Ukrainian chefs have been making a lot of efforts to rethink Ukrainian cuisine and present it in a new role.

Signed together with Ukrainian chefs, ICIP, Foreign Ministry, Ministry of Economy, and DART manifesto will promote the world of Ukrainian cuisine, find new formulas of ancient dishes, and develop domestic tourism.

Varenyky, dumplings, banosh, verguny, borsch - everyone knows these Ukrainian dishes. They are associated with our country.

Here to take at least borsch - it is hundreds of years old, and its compounding differs in each area. Even from family to family, the dish can be different. I am sure that the results of the signing of the Manifesto will help strengthen Ukraine's application for the inclusion of borscht in the UNESCO list of intangible cultural heritage.

Oleksandr Tkachenko added that foreign guests who visited national restaurants in Ukraine "leave the country with entirely different impressions, not only taste, but also the understanding that our national cuisine is not something to be proud of, because only borscht we counted 25 species, and at least from different regions, but it is different in taste depending on the region, because each region is unique, has its own ingredients and has its own preferences.

Maryana Oleskiv, head of the State Agency for Tourism Development, noted that Ukrainian gastronomy is now perceived as more homemade cuisine, and in restaurants, people mostly order foreign cuisine.

Among the chief signatories of the Manifesto are more than 20 Ukrainian chefs, including Yaroslav Artyukh, Eleonora Baranova, Vitaliy Guralevich, Mirali Dilbazi and Yevhen Klopotenko.

The text of the manifesto consists of 10 points; it also spells out steps that "will give Ukrainian cuisine a voice and make Ukraine and its gastronomy interesting and valuable to the world."

We are a generation of Ukrainian chefs. And we have something to say. Responding to the call of the Ukrainian authorities, we wrote this Manifesto for all those who want to see Ukraine on the gastronomic map of the world, who seek to respect national culinary traditions and give them new life. Ukrainian cuisine is still little studied but has great potential to be among the best cuisines in the world. And it is you and I who must help her in this.

At the same time, the chefs themselves, signing the Manifesto, noted the importance of the initiative with the wish that "not only in word but also in deed."
