Food diplomacy: France in Odessa cuisine

This famous French style fish soup was the favourite dish of Armand-Emmanuel du Plessis Duke de Richelieu (grandson of the famous Cardinal of the “Three Musketeers”), the most illustrious mayor of Odessa.

It represents the French influence on the City’s dishes. Sailors from Marseille, Sicily, and other Mediterranean ports brought a seafood broth that has become another Odessa treat. Bouillabaisse, originating in Marseille, is typically made from leftover scraps from the fish market: fish, mussels, and prawns that went unsold. The typical Russian fish soup is called “ukha”, but in Odessa local chefs infuse their fish stew with Provençal seasonings.
