The Black Sea coast is rightly considered one of the oldest wine-growing regions of Ukraine. The ancient Greeks primarily appreciated its favorable terrain for viticulture.
Plain winemaking makes it possible to grow mainly table varieties and varieties suitable for the production of ordinary wines.

The history of the largest winery in Ukraine dates back to 1792, when the Scottish count, Major General Thomas Koble planted the first vine and began the history of the wine region of the southern Black Sea coast. The company produces more than 80 varieties of wines. These are table: dry, semi-dry and semi-sweet, fortified, which are divided into strong and dessert, sparkling and vermouth. Koblevo wines are exported to countries such as Poland, Turkey, Georgia and Norway.
The Koblevo region is located in a unique geographical location between the Tiligul estuary, the Berezan estuary and the Black Sea, which creates ideal conditions for winemaking. Today the area of ââplanting grapes reaches 2500 hectares. The number of bushes per 1 hectare is 3333 bushes. Seedlings are purchased in the best European wine regions, including France, Italy and Germany. The age of the vine is starting from 20 years.
Luxurious roses on the territory of the plant protect the vineyards from insects, and also serve as a kind of indicator of various diseases of grapes. In this way, you can react on time and protect the grapes.
Due to the successful location of production and vineyards, the crop reaches the plant in the period from twenty minutes to two hours, which prevents oxidation and spoilage of the berry. Koblevo is one the only wineries in Ukraine that uses machine grape harvesting. For premium wine material, grapes are harvested only by hand. In particular, white grapes for varietal and elite wines are harvested by hand at night. It has been scientifically proven that from 3 am to 10 am the grape berries have the most optimal temperature for harvesting. During these hours, the taste and aroma are concentrated as much as possible, because the grapes are asleep at this time.
The first production operation is the separation of grapes from the crest. The comb is crushed and used as fertilizer. The seeds are also not thrown away - they are bought by producers of grape seed oil, so nothing is wasted.
The production uses state-of-the-art equipment and European innovations. The wine material is stored in a storage volume of about 20 million liters.
The main volume of Koblevo wine is stored without ageing in barrels. This is an ordinary table wine. However, now the company has a small stock of oak barrels, which are maintained in the new positions of wines "Koblevo".
Vinrest Plant
Velikodolynske, Ovidiopol district, Odessa region
Winery "Vintrest" was founded in 2005. Vintrest is engaged in primary and secondary winemaking. In 2014, the company registered its own trademark "Grande Vallee" (Ukrainian: ÐÑанд Ðале Ðале) - a trademark of dry varietal wines of the Ukrainian winery. Currently, Grande Vallee is the only brand that produces this winery.
The farm is equipped with modern equipment from France, Italy and Germany. Every year the company's management selects the best wine materials exclusively from the harvest of its own vineyards for its own production. Therefore, wines are always produced in a limited series.
The winery is located directly opposite the vineyards. The planting area of ââthe vineyards is 650 hectares. The density of planting vines per hectare is from 2200 to 3600 bushes per 2 hectares. The age of the vine is from 19 to 15 years. The soil is chestnut soil (chernozem).
More than 12 European grape varieties grow on the farm. The winery is the only one in Ukraine that grows and produces varietal wines from the Pinot Meunier variety.
Odessos Winery

Odessos is a young wine project from the heart of the wine region of Ukraine, born in 2019. The name of the winery is closely related to one of the versions of the origin of the name of the city, in honor of the ancient Greek colony of Odessos, located near the bay of modern Odessa.
City Winery Odessos is the first urban format winery in Ukraine. The winery itself is located in the historic center of the city on Tiraspolska Street, 26, in the building of the former, famous throughout the country, the tobacco factory Salve. The opening of the winery is scheduled for 2021.
Special attention is paid to the production of Odessos wines since the stage of grape development. From the first pruning of the vines, winemakers lay the foundation for future grapes to obtain a moderate load on the vines, in compliance with all agronomic measures to ensure the quality and health of raw materials.
Grapes are harvested upon the onset of their "physiological maturity". The content of sugars and acids in grapes is important, but it is more important to have ripe tannins, saturated polyphenols and anthocyanins (body, taste, structure and color), and this is what is called "physiological maturity" of grapes.
Stainless steel tanks are used in production. French oak barrels are used to age the wine and equipment for processing berries of Italian production.
White grapes: Traminer Pink

Beykush winery
Chernomorka, Ochakiv district, Mykolaiv region
The founder of the winery is Schneideris Eugene Leonidovich. In 2010, the idea of ââwinemaking arose. Following the path of soil analysis, solstice and seedling selection, in 2012 the first vineyard was laid on Cape Beikush, the shores of which are washed on one side by the Berezan estuary and on the other by Beikush Bay.
In 2014, the first harvest was received. The winery is the embodiment of high-tech, modern means of wine production. The production volume reaches 24 thousand liters per year. 64 French, American and Ukrainian oak barrels are used for aging. In 2017, Beykush winery received a bottling license.
Geologically, the land where the vineyards are located is part of the flat watershed plateau between the Bug and Berezan estuaries of the Southern Steppe with formed dark chestnut loam soils. The vineyards are located a few hundred meters from the sea and are surrounded on three sides by water, they are constantly blown by the wind. The neighborhoods of estuaries and the sea act as a great natural conditioner, mitigating the climate in dry years, and the wind, blowing the vineyard, significantly reduces the risk of fungal diseases of the vine.
The number of sunny days a year is 225, the average annual rainfall is 400 mm. Soils are brown, alumina. The area of ââplanting grapes reaches 11 hectares, another 2 hectares of young varieties Telti-Kuryuk have been planted. Age of the vine - 6 years.
Beikush Winery holds wine tastings in a picturesque place, which offers a view of its own vineyards and estuary. This place is loved by beautiful white swans and even in winter they do not fly away to warmer lands, they really like it here. Nearby is a water park and a unique sea view.
Belozersky State Farm Agricultural Firm

Year of foundation is 1954. Today Belozersky Agricultural Company is one of the largest producers of seedlings and fruit and berry products in Ukraine. The grape seedlings grown on the farm make up about 80% of all seedlings produced in the country.
The company works with the Odessa Institute of Viticulture and Enology. Tairov, Melitopol Institute of Irrigation Horticulture. Gains foreign experience through cooperation with leading companies in Georgia, Italy and Poland.

The winery is located on the banks of the warm Hadjibey estuary, which helps to reflect sunlight from the surface of the estuary to the vineyards and heat accumulation in the cold season. Planting area of ââvineyards - 14 hectares. The density of planting vines reaches 2600 bushes per hectare.
The climate is transitional from marine to continental. The farther from the Black Sea into the country, the stronger the contrast - cold nights and hot summer days. But the distance to the sea only 15 km contributes to a mild, maritime climate. Babchuk Winery

The owner of the winery, Leonid Babchuk, started his own business in 2004. The winery is located in a picturesque place at a bird's eye view over the Southern Bug River. High-tech production has been established on a small area. The vinifier is made with his own hands and has been improved for seven years. The plans are for a larger winery with greater capacity, expanding the planting area of ââthe vineyard. The winery has received a license to produce alcoholic beverages.
Today the area of ââvineyards is 0.5 hectares, 2000 grape bushes. The age of the vine is 4 years. The production volume reaches 10 thousand liters per year. Aging in barrels from 6 to 12 months.
Maryan Shevchenko Winery

The family winery of Maryana and Natalia Shevchenkiv dates back to 2012. Near the house in 2012, the family planted their first grapes. Although the owner has recently been doing his favorite thing, he has already shown good results. The small winery is equipped with the necessary technical equipment. The Manzul Winehouse family winery was founded in 2012. Founder Manzul Eduard Lvovich and his family decided to start their own business. Technologist of the food industry by profession, by vocation winemaker and innovator. A house with a two-level basement was built on a small plot for maximum use of space. The volume of wine production reaches from 20 to 25 thousand liters per year. Selected grapes are purchased on a contract basis in the Bolgrad district of Odessa region. The age of the vine is at least 20 years. Fermenters with a total volume of 10,000 liters are used in the production. Stainless steel tanks with a total volume of 35,000 liters are used to store wine. 20 pieces of Ukrainian oak barrels are used for aging wine.
For connoisseurs of craft wine, wine tastings are held on a regular basis, with national Bulgarian snacks such as kavyrma, brynza, hot goose pie. The tasting room seats 15 guests.
PJSC "House of vintage cognacs" Tavria "

The company was founded by Swiss colonists in 1889, on the site of the present-day town of Nova Kakhovka. The climatic zone where Taurian vineyards grow is recognized by leading domestic and foreign experts as one of the most ecologically clean zones of Ukraine.
