Artichoke is a new and prestigious product in Ukraine that is popular worldwide. It grows well and even yields two harvests on Ukrainian fertile land. The demand for artichokes is growing, which means production should also increase.

"Artichokes are widely canned, frozen, and used globally. Additionally, the plant is used for the production of medicines. A few years ago, artichokes in Ukraine were 99% imported. Today, during the harvest season, they are a Ukrainian product. This is great for the country and local producers. First, it saves currency by reducing imports. Second, it creates new jobs in rural areas, thus generating taxes. Third, there is the potential for export. The harvest seasons for artichokes in the EU and Ukraine differ, meaning Ukrainian artichokes can fill EU shelves during the off-season. Fourth, there is processing. Canned artichokes are delicious, and freezing is another option," said Vasyl Polischuk.
AV Lichten LLC collaborates with Ukraine's scientific institutions, including the National Academy of Agrarian Sciences (NAAS), to research optimal growing, storage, and processing conditions for artichokes.
"Processing is key to having products available on store shelves year-round. Processing also creates new jobs, boosts other sectors, and contributes to the overall development of Ukraine's economy. Moreover, processing drives exports, leading to foreign currency earnings," said Vasyl Polischuk.
