Evgen Klopotenko has released the book "The Authentic Ukrainian Kitchen" in English.
The book gathers recipes from Ukrainian cuisine, ranging from breads and appetizers to desserts and beverages from all regions of the country. Readers will discover several variations of borscht, how to make dumplings and light garlic rolls, as well as boiled dumplings, fried potato pancakes, sweet and savory breakfasts, salads and sauces, nut cake, and more.
Additionally, Klopotenko shares his own perspective on using vegetables, discusses new approaches to fermentation and pickling, and more.
"These recipes are the result of many years of research into regional Ukrainian culinary traditions. Without layers of propaganda, collectivization, and other harmful Soviet influences that altered the trajectory of our tradition," says Klopotenko.
