A second restaurant of modern Ukrainian cuisine, "Nai," has opened in Prague under the franchise from co-founder and brand chef Volodymyr Yaroslavsky. The first "Nai" establishment has been operating in Wroclaw, Poland, since November.
The restaurant in Prague was opened by Ukrainians, and the Ukrainian embassy in the Czech Republic provided assistance during the seven-month renovation period. Despite challenges such as border strikes and changes in dish import rules, the team successfully coped with the situation.
All furniture, decor, and tableware were imported from Ukraine. Vases and lighting fixtures were custom-made by Ukrainian craftsmen. The Ukrainian influence is evident in the decor, staff uniforms, presentation of dishes, and the level of service, without excessive ethnic motifs.
The menu features dishes such as cabbage rolls with shrimp, borscht with bacon, lazy potato dumplings with mushrooms and mozzarella, and Chicken Kyiv. These dishes were specially developed for the "Nai" franchise. The head chef at the Prague establishment is a chef with prior experience in a Michelin-starred restaurant.
The main office of "Nai" mentions that they are preparing to open establishments under the franchise in New York and another 10 cities worldwide in 2024.
